1: Crack eggs and whisk until combined. Set aside. 2: Lay chicken out on a cookie sheet and cover with all spices, salt, and pepper. Gently massage into chicken. 3: Add olive oil to a pan & add in the chicken. Cook 7 minutes on each side until golden brown. Remove and let rest for a few minutes before dicing. 4: Pour 1/3 cup egg into a nonstick pan. Lay tortilla on top of eggs and cover with a lid for a minute or two. Flip over so the egg side faces up. 5: Coat one half side of the eggs with marinara sauce, chicken, and cheese. Sprinkle basil and oregano. Fold in half and press down firmly. 6: With tortilla folded in half, top with marinara sauce, chicken, mozzarella, and again with oregano and basil. 7: Place into the oven at 425° until cheese has melted and toppings have browned. Remove from oven and let rest for a few minutes. Repeat this process for every tortilla. 8: Slice and serve.
