1: Season the chuck roast generously with salt and pepper on all sides. Heat a large skillet or dutch oven over medium-high heat and add butter. 2: Once the butter melts, add the chuck roast and sear for about 3-5 minutes per side. Remove the roast to a plate. 3: If needed, add another tablespoon of butter to the pan. Sauté the onions for 3-4 minutes until they release some liquid. 4: Add the garlic, beef broth, Worcestershire sauce, balsamic vinegar, onion powder, dried thyme, and bay leaf to the pan. Stir and cover until it simmers. 5: Pour half of the onion mixture into the crockpot. Place the roast inside and top with the remaining onion mixture. Add more broth to cover the roast if necessary. 6: Cook in the crockpot for 6-8 hours until the roast is tender. Shred the roast once done. 7: Combine 2 tablespoons of cornstarch with water in a small bowl, add to the slow cooker, stir, and cook for an additional 5-7 minutes. 8: Serve the roast atop mashed potatoes or cauliflower mash and enjoy!
