A flavorful recipe for baked beef tacos featuring homemade tortillas, a creamy lime-avocado sauce, seasoned ground beef, and sautéed vegetables, baked until golden and cheesy.

TACO SEASONING: Mix 2 tbsp chili powder, 1 tbsp cumin, 2 tsp onion powder, 2 tsp garlic powder, 1 tsp oregano, and a couple pinches black pepper together. TORTILLAS: Combine 2 cups all-purpose flour, 1 teaspoon sea salt, 2/3 cup warm tap water, and 5 tablespoons room temp butter. Knead until a uniform dough forms. Let rest, then divide into 8 equal pieces. Roll thin, then cook over medium heat for about 60 seconds on both sides, until golden brown. SAUCE: Combine 1 cup plain Greek yogurt, 1 lime juiced, 1/2 cup salsa of choice, 1/2 an avocado, 1/4 chopped cilantro, 1 tsp garlic powder, and salt to taste. Whisk together until smooth. MAIN DIRECTIONS: 1.) Season ground beef with 3 tbs of the prepared taco seasoning. Add seasoned meat to a hot pan to brown meat. Cook until cooked through, then add more seasoning if desired. Then, remove and set aside. 2.) Add olive oil to a pan and add in onion, peppers, and tomatoes. Cook until softened. Add in balsamic vinegar, and salt to taste. Cook until completely soft, then remove and set aside. 3.) Grease a 9x13 pan with olive oil. Fill tortillas with a generous portion of beef. Place into baking dish and continue filling other tortillas. Once all tortillas have been filled, top with cooked veggies and cheese. 4.) Place into a preheated oven at 350°F. Cook until golden brown on tops and cheese is melted. 5.) Top with fresh cilantro. Serve with dipping sauce and enjoy!
