1. Pat steaks dry and season with flaky sea salt. 2. Heat a pan to medium high heat with olive oil and add onions. Cook until translucent, add balsamic vinegar and salt to taste. Cook until caramelized. 3. Repeat the same process with peppers. 4. Add a thin layer of oil to a pan. Heat to high and add steaks. Cook until seared then flip and repeat on the other side. Remove from pan and repeat for all steaks. 5. After steaks have rested for about ten minutes, slice into thin strips against the grain. 6. Butter one side of your bread. Lay flat on pan. Add Swiss cheese, steak, onions, Gouda cheese, peppers, Swiss cheese, then top slice of bread. Cook until golden brown, then flip and cook other side. 7. Repeat for the remaining sandwiches. 8. Mix up sauce with mayo and remaining basting liquid in pan. Add a touch of Dijon mustard for extra tanginess. 9. Serve, dip, enjoy!
