1. Preheat oven to 375°F. 2. Sprinkle salt and pepper on the chicken thighs. Heat a pan over medium-high heat with olive oil. 3. Cook chicken thighs on each side for about 5-7 minutes until crispy golden brown. Remove and set aside. 4. In the same pan, add sliced onions over medium heat. Cover and let cook, stirring occasionally, for about 25-30 minutes until caramelized. 5. Once caramelized, add thyme, bay leaf, garlic, and additional salt and pepper to the pan. Stir. 6. Add chicken stock to the pan, increasing heat to medium-high, and bring to a simmer. 7. Increase heat to high, add chicken thighs, and bring to a boil. Place in oven for 15 minutes. 8. Remove from oven, place cheese over the top, and return to the oven under the broiler for up to 5 minutes, watching closely to avoid burning. 9. Serve over mashed potatoes and enjoy.
