An easy crockpot meal you can throw together quickly and fuel your family with whole nutrient dense foods. This version uses rice instead of tortillas in the soup, but can be topped with chips.

1.) Prepare your vegetables. Add all ingredients together into the crockpot. 2.) Set to high setting on crock pot. Cover and let cook for 2-3 hours. If adding tortilla chips, you can add those in the last 20 minutes of cooking. Add in cheddar cheese and stir to combine. 3.) Serve and top with your favorite toppings; sour cream, hot sauce, cilantro, tortilla chips, more cheese, etc. 4.) Enjoy and share with friends!
