1: Whisk together chicken stock, soy sauce, tomato paste, hoisin sauce, vinegar, brown sugar, fresh ginger, red chili flakes, and corn starch in a bowl and set aside. 2: Add chicken to a bowl and toss with corn starch and black pepper. 3: Heat olive oil in a pan over medium-high heat and add chicken. 4: Cook chicken fully, then add in broccoli, carrots, onions, and garlic. 5: Add 2 tablespoons of water and cover with a lid for 7-10 minutes. Veggies should still have a food snap to them. 6: If using, add sugar snap peas and cook for an additional 5 minutes. 7: Pour the sauce over the chicken and veggies, stir to combine, and serve over rice or eat by itself.
