What you need

lb chicken

clove garlic clove
tbsp fresh parsley

tsp ground cumin

tbsp butter

tsp chili powder

tsp coriander
oz cheese
tsp oregano

tsp paprika

tsp smoked paprika

tsp table salt

slice sourdough bread

tbsp pickled jalapenos

Instructions
1. Pound chicken breasts thin and add them to a bowl with olive oil. Mix all chicken seasonings together and pour them over the chicken. Massage seasoning into chicken and set aside. 2. Heat a large pan over medium-high heat with olive oil. Add chicken to the pan and cook until each side is crispy golden brown. Remove from pan and let rest once done. 3. While chicken is cooking, prepare cowboy butter by mixing all cowboy butter ingredients in a bowl. 4. In a separate bowl, combine all jalapeño popper filling ingredients. 5. Chop the cooked chicken and add back to the pan over medium heat. Add diced onions, jalapeños, and minced garlic. Cook until onions soften then add cowboy butter. Stir together and remove from heat once combined. 6. Place a slice of sourdough bread buttered side down in a pan. Spread jalapeño popper mixture on top, then add about 1 cup of chicken mixture and cheese. Place another slice of bread on top and cook until golden brown, flip, and continue cooking until the other side is golden brown as well. 7. Repeat the sandwich preparation and cooking steps for remaining slices of bread and mixture. 8. Serve and enjoy the grilled chicken and cheese sandwiches.
