What you need
egg

tsp dijon mustard

tsp black pepper

tbsp butter
cup ketchup

cup sauerkraut

tbsp red onion

tsp onion powder
tsp salt

lb cube steak

tbsp sour cream

tsp horseradish

slice swiss cheese

cup avocado oil
tbsp fresh parsley

tsp mustard powder
cup mayo

tsp coriander

tbsp worcestershire sauce

tsp garlic powder

tbsp olive oil

tbsp fine sea salt

tbsp lemon juice

tsp pickle
Instructions
1. If making own mayo—combine all mayo ingredients in a quart mason jar, adding oil last. Blend with a stick/immersion blender. Set aside. 2. Add all 1000 island dressing ingredients together. Shake until combined. Place into fridge. 3. Combine all spices and seasonings. Drizzle cube steaks with olive oil, then sprinkle generously with seasoning. Massage in. Flip to other side and repeat. Continue for remaining cube steaks. 4. Melt butter in a pan over medium heat. Add cube steaks and cook about 5 minutes, until a light crust/sear forms on the steaks. Flip and repeat. Remove from pan, and place onto a plate, covering with a bowl to allow steam to get trapped inside. 5. Once done cooking steaks, slice into thin strips, then cut strips into 1-2 inch long slices. Add to a bowl, then pour juices over top and toss to coat. 6. For assembly, place tortillas (homemade tortilla post pinned on profile), then cheese, then a tablespoon or so of sauce, then sauerkraut, then steak, a little more sauce, then fold in sides, and roll tortilla up. 7. Warm a pan to medium heat. Place wraps seam side down and cook until golden brown. Continue cooking until all four sides are golden brown. Repeat for remaining wraps.
