CHEESEBURGER HOT POCKETS RECIPE

Just because something is a blast from the past, easy, and tasty doesn’t mean we should be scarfing it down all the time. I bet most of you have a memory of hot pockets torching your taste buds like molten lava… but now you can whip up your own at home with top-notch ingredients without fueling the disaster that is a modern hot pocket.

What you need

pinch coarse sea salt

cup ketchup

cup all purpose flour

pinch cayenne pepper

cup plain yogurt

lb ground beef

cup beef broth

cup cheddar cheese

tbsp paprika

tsp mustard

tbsp onion powder

tbsp garlic powder

cup pickle

pinch salt

Instructions
1.) Mix yogurt and flour together until combined. Once combined, knead for 5 minutes until smooth. Adjust yogurt by a tablespoon or two. Dough should be slightly tacky, but not too sticky. 2.) Divide dough into 8-10 balls…depending on how large you want the hot pockets. Roll into balls, then using a rolling pin and a floured work surface, roll them into circles. 3.) Cook ground beef with onions until beef is browned and onions are softened. 4.) Add in spices and seasonings, ketchup, mustard, cream cheese, pickles, broth, and about 1/2 cup of the cheddar cheese. Mix until combined. 5.) With hot pockets dough laid out, place two scoops of beef mixture onto dough. Place a small handful of cheese on top, the fold edges of dough toward the center—pinch lightly to seal. 6.) Flip over onto a floured surface or parchment paper, and repeat until all pockets are sealed. 7.) In a pan over medium heat with a thin layer of olive oil, lay your pockets seam side down and place the lid on top. Cook until golden brown, flip and cook the other side with lid on as well. 8.)
