Chile Colorado Chuck Roast Grilled Cheese

1.) Set slow cooker to medium/low heat and place your cubed roast into the pan. Add your onions, 1.5 cups water, and place your bomb in slow cooker. Give a quick stir and let cook.
2.) Cover and let cook until roast is tender and onions have softened. Remove roast and shred. Add roast, onions and a couple scoops of the liquid to a bowl and mix together.
3.) Butter one side of each slice of bread. Place butter side down on a pan or skillet over medium heat. Top with cheese, 1/2 cup of meat mixture, another slice of cheese, then bread and let cook until golden brown.
4.) Flip and let cool until other side is golden brown as well. Remove and continue cooking remaining sandwiches until all are done.
5.) Use remaining juice in slow cooker as your dipping sauce and enjoy the best darn grilled cheese you’ve ever had.
