Oven-Baked Kebab Gyros

A delightful oven-baked version of the traditional kebab gyros served with homemade pita bread, pickled onions, and tzatziki sauce.

What you need

pinch red pepper flake

tbsp coriander

tsp black pepper

lettuce
lb ground beef

tsp baking powder

cup greek yogurt
tbsp apple cider vinegar

red onion

tsp baking soda

cup all purpose flour

lemon zest

tbsp ground cumin

tsp fine sea salt

cup cucumber

fl oz lemon juice

clove fresh garlic

tbsp paprika

cup plain greek yogurt

tomato
tsp salt

clove garlic clove

tbsp onion
Instructions
1. Combine dry pita ingredients together. Mix in Greek yogurt until combined. Knead until smooth dough forms. Let rest for 5 minutes. Cut into 6-8 equal pieces depending on desired pita size. Roll into 1/4 inch thick circles. 2. Place pita onto a medium heat pan and cover with lid. Cook for about one minute, flip, and cook other side while covered with lid. Remove and repeat for remaining pita. Place onto a plate and let rest in the oven with light on. 3. Combine beef with seasonings. Mix by hand. Place onto a parchment covered baking sheet and press to edges until uniform thickness. Cut into 1.5 inch wide strips. Place into oven at 425°F for about 15 minutes, or until browned. 4. Combine all pickled onion ingredients, cover and place into fridge. 5. Grate cucumber and squeeze out all water from the cucumber. Combine all tzatziki ingredients, cover and place into fridge. 6. Assemble: pita, tzatziki sauce, lettuce, meat, tomatoes, onions, more tzatziki sauce, then fold over. Wrap in parchment paper, serve, and enjoy!
