Full Steak Quesadilla Recipe

A delicious and real food recipe for steak quesadillas, featuring tender flat iron steak, colorful peppers and onions, sweet corn, melted cheddar cheese, homemade tortillas, an aromatic herb butter, and a creamy cilantro-lime sauce.

What you need
tsp salt

pepper

tbsp butter
head garlic

cup water

cup sweet corn

sweet onion

cup cilantro

cup plain greek yogurt

tbsp hot sauce

tsp garlic powder
cup flour

tbsp balsamic vinegar

tsp rosemary

cup fresh cilantro
lb flat iron steak

cup cheddar cheese

unsalted butter

snack peppers

Instructions
1.) Make tortillas. Combine 2 cups flour, 1 tsp salt, 4 tbsp butter and 1 1/3 cup room temp water. Knead until you have a smooth dough ball. Divide into 10 pieces. Roll flat. Cook on cast iron pan until golden brown on each side. 2.) Season steaks with salt and pepper. Add olive oil to coat pan. Add steaks in medium high heat. Cook until seared and reaches desired doneness—set aside. 3.) Cook peppers and onions together. Once softened add balsamic vinegar and salt. Cook until caramelized—remove and set aside. 4.) Cook sweet corn in butter. Salt to taste. Remove and set aside when done. 5.) Melt butter, add remaining ingredients from herb butter list. Slice your steak in thin strips and add into herb butter sauce…just enough to warm through. 6.) Set aside remaining herb butter sauce. 7.) Heat a cast iron pan to medium heat. Add tortilla, then cheese, steak, peppers/onions, corn, more cheese, then top tortilla. Flip over once browned. Remove and set aside once done, then repeat. 8.) Combine the sauce ingredients in a bowl. Serve with quesadillas. 9.) Serve and enjoy!View original recipe
