What you need

tbsp butter

pinch salt

tsp fine sea salt

tsp ground cinnamon
cup sourdough starter

cup all purpose flour

cup brown sugar

cup powdered sugar

cup buttermilk

tbsp honey

tsp vanilla extract
Instructions
1. Add flour to a large mixing bowl. Grate the cold butter into the bowl. Cut the butter into the flour with a fork. 2. Add the sourdough starter, buttermilk, honey, and salt. Mix until well incorporated. Knead until a smooth dough forms. Cover the bowl and let rest on the counter until the next morning. 3. Mix the brown sugar, cinnamon, and softened butter in a small bowl. Set aside. 4. Generously flour your counter and turn the dough onto it. Lightly flour the top of the dough and roll it into a rough 12” x 24” rectangle. 5. Spread the cinnamon sugar filling over the surface, leaving a half-inch bare strip at the edges. 6. Roll the dough into a log shape from the longest side. Cut the log into 12 pieces. Arrange the rolls in a greased cast iron skillet or baking dish, leaving space between each piece. 7. Let rest for 1-1.5 hours until the rolls have puffed. 8. Preheat oven to 375°F. 9. Bake for 35-40 minutes until the tops are light golden brown. 10. Mix the glaze ingredients in a small bowl while the rolls bake. Glaze after they’ve cooled slightly.
