
BBQ Chicken Twice Baked

Delicious BBQ chicken twice baked potatoes, perfect for a meal with family. Loaded with chicken, cheese, and topped with sour cream and BBQ sauce, these potatoes are a must-try!

What you need

lb chicken breast

tbsp olive oil
tsp salt

tsp black pepper

tbsp butter

tbsp fresh chives

cup cheddar cheese

sour cream

bbq sauce

tsp paprika

tsp garlic powder

tsp onion powder
tbsp brown sugar
Instructions
1: Rub olive oil all over your potatoes. Sprinkle with salt and pepper. Place it on a preheated oven at 425°F for roughly 1 hour 15 minutes. 2: Slice chicken breasts into cubes. Mix BBQ seasoning together and sprinkle on top of chicken. Massage into chicken. 3: Heat a pan to medium heat and cook chicken until done. 4: Once potatoes are done, remove from oven and let cool. Slice off the top of the potato and scoop out the inside, leaving roughly 1/4 inch layer on the inside. 5: Take out about half of your scooped out potato and set it aside. 6: Add in your cooked chicken to the remaining half of the potatoes. Add in your chopped chives and shredded cheese. Stir and mash until combined. 7: Scoop filling back into your potatoes. Place potatoes back into the oven for 15-20 minutes until filling is reheated and melted together. 8: Remove and top with sour cream and BBQ sauce for the perfect flavor combination.
