
Chicken Quesadillas

Quick and delicious chicken quesadillas made with tortillas, sweet bell peppers, onions, corn, and a blend of cheeses. These quesadillas are easy to prepare and perfect for dinner. Serve with salsa, sour cream, or hot sauce.

What you need

yellow onion

cup cheese

tsp cumin

splash balsamic vinegar

tsp chili powder

tsp black pepper

tbsp paprika

tbsp italian seasoning

tbsp garlic powder

tbsp salt

cup sweet corn

bell pepper

Instructions
1: Preheat oven to 400°F. Drizzle chicken with olive oil. Coat with mixed together seasonings. Place into oven and cook until internal temp reaches 165°F. Once done, set aside to cool. 2: Cook onions and peppers together. Once softened, add in balsamic vinegar and salt to taste. Cook until translucent and softened. Remove and set aside. 3: Cook your corn however you prefer. Butter and salt to taste. 4: Once chicken has cooled carve it and roughly chop it. 5: Preheat a large pan or a skillet. Lay down your tortillas. On one half, lay down cheese, veggies, corn, chicken, more cheese, then fold other half of tortilla on top. Cook until browned, then flip over and cook other side until browned. 6: Remove from heat and set aside. Repeat until all quesadilla filling has been used. 7: Serve with your favorite salsa, sour cream, hot sauce and enjoy!View original recipe
