Lay your brisket on a large piece of foil and rub a generous amount of mustard over the entire thing. Coat generously with seasoning and gently massage into meat.
Wrap brisket in foil so it's sealed well, then place into the oven at 250° until the internal temp reaches about 185°—about 2 hours.
Bake potatoes however you choose (microwave, oven, air fryer, etc.). Cut in half and scoop out most of the center into a large bowl.
In that bowl, add your milk, butter, sour cream, chives, salt, and pepper. Mash to desired consistency.
Place a large scoop of the potatoes back into the potato shells. Top with a handful of brisket and cheese. Bake in the oven at 300° until warmed through and cheese is melted—about ten minutes.
Top with flaky salt, parsley, sour cream, or whatever your heart desires.
 Dig in and enjoy.
