
Butter Chicken

This butter chicken recipe features tender chicken cubes simmered in a sauce made with extra virgin olive oil, yellow onion, garlic, ginger, spices, and finished with heavy cream and lemon juice, served over white rice.

What you need

cup yellow onion

garlic clove

tbsp fresh ginger

tbsp salted butter

cup chicken stock

oz tomato paste

tsp ground cinnamon

tsp fine sea salt

tsp cumin

tsp turmeric
lb chicken breast

tbsp fresh lemon juice

cup heavy cream

cup white rice
Instructions
1: In a large pan heat olive oil over medium heat. Add in the onion, garlic, and ginger. Cook until the onion is softened, about 2 to 3 minutes, stirring often. 2: Cook rice according to package. Set aside once done. 3: Add in the butter, chicken stock, tomato paste, cinnamon, salt, cumin, and turmeric. Stir until combined. Bring to a simmer over medium heat, then stir in the chicken until coated. Cover and cook for about 15 minutes, until chicken is done. 4: Stir in the lemon juice and heavy cream.
