
Cheesy Chicken Broccoli Penne Casserole

What you need

oz penne
broccoli

tbsp olive oil

yellow onion
oz baby bella mushroom
clove garlic
tbsp flour
cup chicken stock

cup milk

tsp fine sea salt

tsp black pepper
cup shredded cheddar
cup shredded mozzarella
Instructions
1: Prepare all your veggies and other ingredients. 2: Add olive oil to a pan over medium heat. Add in chicken (sprinkle with salt) and cook 5-7 minutes each side. 3: Begin cooking your noodles. Once noodles are almost done add in your broccoli and cook for an additional 4-5 minutes. Just enough to soften broccoli. Strain and set aside. 4: When chicken is fully cooked, remove from pan and allow to cool. Dice and set aside. 5: Without straining the chicken fat or extra olive oil, add your onions to the pan, allowing them to soften. Once softened, add in your garlic and mushrooms. Cool until the mushrooms release their liquid. 6: Add in flour—stir. Add in broth—stir. Add in milk—stir. Add in salt, pepper, and 1 cup of the cheddar cheese—stir. 7: In a deep 9x13 dish add your chicken, noodles, and broccoli, and sauce. Gently mix until combined. Top with remaining cheddar cheese and mozzarella. 8: Bake in oven at 400° for 20 minutes. Turn on broil for the last few minutes to melt cheese perfectly!View original recipe
