This Creamy Lemon Pepper Chicken served on a bed of rice is a perfect weeknight meal that is both quick and balanced for kids and adults. It combines marinated chicken breasts, cooked rice, fresh spinach, and a creamy lemon sauce.
1: Pound or slice your chicken breasts thin.
2: Squeeze two lemons into a large bowl. Add in the salt, pepper, and garlic powder. Add your chicken breasts, cover and let marinate for at least 20 minutes or up to overnight.
3: Cook your rice using your preferred method.
