This Creamy Lemon Pepper Chicken served on a bed of rice is a perfect weeknight meal that is both quick and balanced for kids and adults. It combines marinated chicken breasts, cooked rice, fresh spinach, and a creamy lemon sauce.

What you need

cup milk

cup fresh spinach

tsp black pepper

cup parmesan cheese

tbsp garlic powder

tbsp olive oil
Instructions
1: Pound or slice your chicken breasts thin. 2: Squeeze two lemons into a large bowl. Add in the salt, pepper, and garlic powder. Add your chicken breasts, cover and let marinate for at least 20 minutes or up to overnight. 3: Cook your rice using your preferred method. 4: In a large pan, add olive oil and cook your chicken for 5-7 minutes on each side until golden brown on both sides. Remove and set aside. Once rested, slice into thin strips. 5: Using the same pan, deglaze it with the juice from your remaining lemon. Add your milk and bring to a simmer. 6: Once the milk is heated through, add your cheese, stirring constantly until incorporated. 7: Optionally whisk in a tablespoon of flour, stirring until fully combined, to achieve a thicker sauce. Once you’ve reached your desired thickness, add in your spinach and cook just until wilted down. Remove from heat. 8: Add a large spoonful of rice to your plate.
