
Crockpot Caramelized Onion Pot Roast

What you need

tbsp butter

clove garlic

cup onion

cup beef broth

tbsp worcestershire sauce

tbsp balsamic vinegar

tsp onion powder

tsp dried thyme
bay leaf
tbsp cornstarch

Instructions
1: Season the chuck roast generously with salt and pepper on all sides. Heat a large skillet or dutch oven over medium-high heat and add butter. 2: Once the butter melts, add the chuck roast and sear for about 3-5 minutes per side. Remove the roast to a plate. 3: If needed, add another tablespoon of butter to the pan. Sauté the onions for 3-4 minutes until they release some liquid. 4: Add the garlic, beef broth, Worcestershire sauce, balsamic vinegar, onion powder, dried thyme, and bay leaf to the pan. Stir and cover until it simmers. 5: Pour half of the onion mixture into the crockpot. Place the roast inside and top with the remaining onion mixture. Add more broth to cover the roast if necessary. 6: Cook in the crockpot for 6-8 hours until the roast is tender. Shred the roast once done. 7: Combine 2 tablespoons of cornstarch with water in a small bowl, add to the slow cooker, stir, and cook for an additional 5-7 minutes. 8: Serve the roast atop mashed potatoes or cauliflower mash and enjoy!View original recipe
