
Loaded Chicken Fajita Quesadillas

Fajita style quesadillas featuring a homemade marinade for chicken, complemented by onions, bell peppers, and cheese, perfect for eliminating picky eaters!

What you need

tortilla

yellow onion

bell pepper

tbsp balsamic vinegar

cup cheddar cheese

tbsp orange juice

tbsp apple cider vinegar

tbsp lime juice

clove garlic

tbsp chili powder

tsp cumin

tsp paprika

tsp cinnamon

tsp salt

black pepper
Instructions
1: Cube your chicken breasts and set aside. 2: Mix your marinade ingredients together. Add your chicken in and massage marinade into chicken. Cover and place into fridge for one hour or up to 24 hours. 3: Slice your onions and peppers into short strips. Heat a pan to medium heat and cook until softened. Add in balsamic vinegar to finish off your veggies. 4: Cook your chicken in 2-3 batches so you can get a nice browning of the chicken. Remove and set aside once done. 5: Heat a non-stick pan to medium heat. Lay down a tortilla, and lay down cheese on half the tortilla, then veggies, then meat, then more cheese, then fold the other half over and press down. Once the bottom side is browned, flip it over and cook until the cheese is melted. 6: Remove, set aside, and continue cooking the rest of your quesadillas until complete. 7: Serve with guacamole, sour cream, salsa and more.
