What you need

Instructions
1: Place pan on medium high heat. Add olive oil. Sear pot roast on all sides. 2: Add in broth, then garlic, carrots, onions, celery, potatoes. Cover with more broth if needed. Drizzle in balsamic vinegar. 3: Place into oven at 400°F for 40 minutes then reduce heat to 225°F for 4-5 hours or until roast is tender and falls apart. 4: Spoon roast from the pan. 5: Melt butter in a saucepan. Add in flour until a roux forms. Add in pot juices and salt. Stir and taste. Add in more juice, salt…stir and taste. Repeat until desired consistency and taste. Finish with some black pepper. 6: Spoon potatoes into a large bowl. Add in butter, buttermilk, heavy cream, garlic, onion, salt and pepper. Mash to desired consistency. 7: Serve roast alongside potatoes and veggies. Cover with gravy and enjoy.View original recipe
