1: Jab a few holes into your potatoes with a fork, drizzle with olive oil, then sprinkle with salt and pepper and rub onto potatoes.
2: Wrap each potato in aluminum foil and bake in the oven at 400°F for about an hour, or until a fork can be inserted into the potato easily.
3: Cube your steaks, then drizzle with olive oil and season generously with salt and pepper.
4: Preheat a large pan to medium high heat. Cook steaks to desired doneness. It’s a ribeye…don’t get carried away…medium is the furthest I’d go.
5: Once they’re cooked to about 135°F reduce heat, melt butter and add in your rosemary. Toss steak cubes in butter quickly, then remove from heat and set aside.
6: Slice your potato to open it up. Drizzle the herb butter. Sprinkle cheese on top, then place under broiler until cheese melts.
7: Topping your steak with chives and some extra coarse salt will send this over the top.
8: Enjoy and share with a friend or two.
