Roasted Butternut Squash Pasta Sauce

A homemade roasted butternut squash pasta sauce made with pan-fried chicken breasts and a variety of fresh ingredients. This dish is perfect for a family dinner and is both healthy and delicious.
1: Dice produce into medium chunks and place into a baking dish.
2: Toss to combine. Sprinkle with salt and spices. Mix with hands or spoon and then toss with 2 tbsp olive oil.
3: Roast in oven at 400° for 30 minutes, or until a fork easily pokes into squash.
4: Remove, let cool. Pour into a food processor and mix until smooth. Set aside or place into fridge if not using right away.
5: Cook noodles according to package.
6: Pour 1 tbsp olive oil into pan over medium high heat. Salt both sides of chicken and place into pan, cooking both sides chicken for about 7 minutes until golden brown.
7: Remove from pan. Let cool for 5 minutes and then slice thin.
8: Add sauce back into pan. Add in chicken and cooked noodles. Heat through. Serve and top with fresh grated mozzarella or Parmesan cheese!
