This mostly homemade twist on spaghetti features tender chicken thighs in a flavorful sauce with sweet onions and ripe tomatoes, perfect for family dinners.
1: Sauté chicken thighs 5-6 minutes on each side.
2: Add in the stock, onions, tomatoes, balsamic vinegar, and brown sugar. Cover and reduce heat. Cook for roughly ten minutes until onions and tomatoes are softened.
3: Remove chicken from pan to a cutting board. Let sit for a few minutes, then dice into cubes.
4: Increase the heat and boil the stock mixture until it reduces and begins to thicken to a sauce-like consistency.
5: Add one jar of pasta sauce to stock mixture and add chicken back in. Stir to combine evenly.
6: Serve atop noodles with fresh mozzarella and Italian seasoning.
