
Stuffed Chicken Rollups

These stuffed chicken rollups can be prepared in about 15-20 minutes, making them a convenient and high-protein meal for families. The recipe includes two variations: Broccoli Cheddar and Parmesan Chicken.

What you need

cup broccoli

clove garlic

Instructions
1: Pound chicken breasts as thin as possible without turning it into ground meat. I use a rolling pin, with the breast in a gallon zip-loc bag, and it works perfectly. 2: Lay pounded chicken breast on a large piece of press’n seal or Saran Wrap. Top with desired ingredients and proceed to roll tightly. Seal at the ends and ensure wrap helps hold the seal tightly. 3: Repeat step 2 for as many breasts as you need to roll up. 4: If making ahead of time, place into fridge until you are ready to cook them. 5: Pour olive oil into a large frying pan. Heat over medium and gently place chicken rollups into pan seam side down. Let them cook about 10 minutes, or until golden brown, before flipping over. Cook for another 7-10 minutes. 6: If making Parmesan chicken, top with marinara sauce and freshly grated Parmesan. Place into the oven under the broiler for 5 minutes, taking care not to burn. 7: Remove from oven, allow to cool for a few minutes. Enjoy!View original recipe
