French Onion Chicken Thighs are a savory dish featuring tender chicken thighs simmered with caramelized onions, garlic, and spices, topped with melted mozzarella and Gruyère cheeses. This comforting meal is perfect for a hearty dinner.
1. Preheat oven to 375°F.
2. Sprinkle salt and pepper on chicken thighs. Heat a pan over medium high heat with olive oil.
3. Cook chicken thighs on each side for about 5-7 minutes until crispy golden brown. Remove and set aside.
4. In the same pan, add sliced onions over medium heat. Cover and let cook, stirring occasionally, for about 25-30 minutes until caramelized.
5. Add thyme, bay leaf, garlic, and salt/pepper to the onions and stir.
6. Add chicken stock, increase heat to medium high, and bring to a simmer.
7. Increase heat to high. Add chicken thighs and bring to a boil. Once boiling, place into oven for 15 minutes.
8. Remove from oven, place cheese over top, and put back into oven under the broiler for no more than 5 minutes. Watch closely to prevent burning.
